Avocado Toast Salad
Real-food enthusiast and Instagrammer Isabel Regehr of @bellshappyfood puts a paleo-spin on The Cutting Veg's Avocado Toast Salad by subbing the bread for grain-free & whole-food Everything Swapples.
- 1 Everything Swapple
- 2 handfuls spring greens, tossed with fresh lemon juice, olive oil, sea salt (red chili flakes optional)
- 1/4 avocado, sliced
- 1 egg, soft-boiled, sliced in half
- 1 handful of cherry tomatoes
- 1/2 bell pepper, chopped
- 1 Tablespoon roasted pumpkin seeds
- Prepare your Everything Swapple by microwaving it until defrosted through the center, then toasting for 5-7 minutes in a toaster or oven. Alternatively, toast for 20-25 minutes from frozen.
- Cut the toasted Swapple into cubes.
- Toss the cubed Swapple with the rest of the ingredients in a large bowl.
- Transfer to a plate and enjoy!
