Maple Sweet Potato Toast Topper

This sweet potato mash tastes like the inside of a freshly baked pie! Naturally sweetened with maple syrup and with the added creaminess of almond butter, you'll be trying to find an excuse to put this vitamin-rich spread on pretty much anything.

Ingredients:
  • 2 Cinnamon Swapples
  • 1 medium sweet potato, skin-on
  • 1/4 cup water
  • 2 Tablespoons almond butter
  • 1 Tablespoon maple syrup
  • 1/2 teaspoon vanilla extract
  • pinch of salt
  1. Toast your Cinnamon Swapples per the box instructions. Set aside.
  2. Wash the skin of your sweet potato, and carefully pierce several times all over with a fork.
  3. Place sweet potato into a microwave-safe bowl with the 1/4 cup water, and microwave on high for 3 minutes.
  4. Flip the sweet potato over to the other side, and microwave on high for another 3 minutes.
  5. Check your sweet potato (careful, it will be HOT!) It should be soft. If it's not, microwave it for another minute.
  6. Remove from the microwave, and allow to sit on the counter to cool for 5 minutes before handling.
  7. Once sweet potato is cooled enough to handle, carefully slice in half lengthwise with a knife. Using a spoon, scoop the orange flesh into a small mixing bowl. Discard the skin.
  8. Mash the sweet potato with a fork.
  9. Add the remaining ingredients to the mixing bowl with the mashed sweet potato, and stir together until everything is well incorporated.
  10. Spread onto your toasted Swapples, and enjoy!
